Upon pouring you'll first notice the color, a rich brick red tinged with violet. We recommend allowing this wine a few moments to open up after it is poured, whereupon rich aromas of butterscotch and toffee will warmly invite you to take your first sip. Notes of plum, cherry and red currant dominate the fruit characteristics. With your first swallow you'll notice bursts of bright allspice and new leather blooming at the back of your mouth. This vintage exhibits moderate tannins and a bright acidity, which lends it to pair well with fattier foods, while its full body makes it an excellent compliment to red meat. Ribeye, aged cheddar, and herbed sausage would all make great pairings for this delicious wine.
Blended with small percentages of Cabernet Franc and Petite Verdot, this classic Bordeaux blend illustrates what Cabernet can do in the Sierra Foothills.
